The season for these lemons can dictate when you find them, but I highly recommend. They are more fragrant and have a richer and slightly sweeter flavor than regular lemons. I use them in hot water or seltzer for flavor. Basic and simple, yet feels like a treat !

Recipe: Shrimp Salsa

One of two Summer Standards: these two recipes are simple, easy and delicious:

Shrimp Salsa

1lb cooked good quality cocktail shrimp
1 28oz can petite diced tomatoes
1 Vidalia Onion chopped
1 large jalapeno diced (2 if you prefer)
1 bunch washed, chopped cilantro
4-5 limes juiced
Salt and pepper to taste

Rinse shrimp and combine all ingredients in a large bowl; flavor is best if made an hour or two in advance. Serve with Tostitos Scoops chips if possible because they hold the salsa perfectly.

1lb Shrimp Serves 6 adults as an appetizer.

Recipe: Corn Salad

Second Summer Standard: these two recipes are simple, easy and delicious:

Corn Salad

Cooked corn off the cob (perfect use of leftovers)
1 bunch cilantro; washed and chopped
1 bunch chopped scallions or onion
1 pint cherry or grape tomatoes cut in half Olive oil+red wine vinegar to taste

Flavor best when made an hour ahead, but not necessary.

You can add almost anything to this recipe – fresh mozzarella or goat cheese, basil in place of cilantro, orzo pasta.
